Tatsuru Rai is the owner and chef of Sobatei RakuichiĀ restaurant in Niseko, Hokkaido. Its consideredĀ one of the great soba housesĀ in the world. With the help of his wife Midori, he mixes, kneads, and cuts all of the buckwheat to order.

He was the first person to appear on stage withĀ his wife atĀ the fourth annual MAD4 Symposium, in Copenhagen. Watch the video below of chefĀ Tatsuru makingĀ soba from scratch and demonstrating his craft in complete silence.
